Hello! I am sat in the bakery on this beautiful, sunny Wednesday afternoon. I am on my own now, all the baking for the day is done, doughs are tightly wrapped, waiting for their turn to be shaped and become buns, bread is slowly fermenting in the cold to be baked in a steaming hot oven in the morning.
