August news from the bakery

Hello, good evening. How are you? How is your summer going? Are you also stunned that it's August already? Are you thinking about how fast Christmas will approach? (I am!). However, I am trying to focus on the here and now and here are some important bits I need to share with you.

First of all, please do remember that we are open on Wednesdays. If we look at how busy we are for the rest of the week, Wednesdays can't be called a success (just yet). I am aware that some of you would come more eagerly if we had bread but that's not possible just yet. There is such plan but we need a few more months to make it happen.

We are currently quite understaffed (some circumstances mixed with summer holidays) so we would like to ask you to be understanding if (especially over the weekend) we sell out quite early in the day (and you really are great when that happens so thank you!). We will have a couple of wonderful new people joining us in September and, going from there, we will only be able to create more and better for you. I have big plans and dreams for all the products we can craft for you so stay tuned!

To make things a little bit easier for us, we have decided to CLOSE the bakery for ONE WEEK in August for a holiday break (17 - 23 August). We will be back to normal week commencing 24th August.

And now for some good and bad news on the same subject. The question many of you asks is - when are we doing next workshops and the bad news is that for now, the last date that has been fully booked is 31 August. Because we are now open on Wednesdays, we need the kitchen for prep on Mondays (that was the only day when nobody worked in the bakery), therefore it will be very hard to find time and space to do that but please do not despair because.......

Leavened is growing from within. It has always been my wish to just that, no second and third locations, no wholesale - just create more, give people space to learn, meet and talk about baking, flick through baking books, I am sure you can see (and share) the vision. Thanks to you (as you support us through sales), to our landlords (as they are always willing to back my ideas) and small thanks to me for being determined - we are getting some more space. It will not be in the same building but still on the farm. We will transform the new place into workshop/test kitchen. What is more, we should be able to move pastry production in there so we can explore making more variety of bread and finally, my personal cherry on top - I will have my little office. And that's something worth waiting for right? You can probably imagine my excitement as I have many ideas about how we can make the most of it. Ever since I thought my first class I knew that sharing my knowledge with people gives me an incredible amount of joy and satisfaction which is then boosted by your lovely emails/messages/chats about the loaves you're currently baking. My heart grows and sings! In terms of time frame, there isn't a set date yet but I am expecting that January is the most reasonable deadline (if not a little bit pessimistic). So all I am asking is please be patient as it's definitely worth it.
