Hello! The right thing to say tonight would be that "it's a bit hot isn't it?" but I suppose every single one of you had at least one of this conversations since Saturday so I will skip that part. I was very lucky to be in one of the most beautiful cities in Europe which was thankfully much cooler, very sunny and windy - Copenhagen. Did I fall in love with the place? Absolutely! Did I eat a lot of pastries? Yes but one can only eat so many, unfortunately much stomach didn't want to follow my eyes and as much as I wanted to try everything I just couldn't (which is a great reason to come back). I have to tell you that when I sat on a bench of one of the best bakeries in Europe (or even world?) I eating my kimcheese toastie, I had this eye watering moment of pure happiness and fulfillment. That's because love of bread and baking brought me there and made it possible. It was a truly my very own majestic moment and I am very grateful that I found that kind of passion in my life. And the best part is that I get to share it with you!

The bread I brought from my trip was made with Øland flour which is quite popular in Scandinavian countries, not so much in the UK (just yet). I am happy to let you know that we do have a few sacks of this wheat in the bakery and we will make you some bread with it. We already run a trial and the result was rather delicious. Please keep your eyes peeled as it will be coming to you at the end of this week.

Unfortunately, due to the high temperatures, we won't be offering any laminated pastries this week (or until further notice). The butter is melting in the process and the quality of croissants won't be as good as we want it to. We will base our bostock on a brioche and give you some other lovely options to choose from.

We will have a different selection of pastries throughout the week.


If you would like to order your bread and pick it up from Potstop on Thursday, please let us know by 2 pm on Wednesday (email to hello@leavened.co.uk). The orders will then be ready for collection between 2 - 5 pm.


If you would like your order to be delivered by Box Bike, let us know a day before at least and we will arrange the delivery for you, thank you!
