I am very pleased to say - I would like to invite you to sourdough workshops in my bakery.

As sourdough takes time, we will meet in the morning and finish around 3 pm. You will be provided with everything you need for the day (just please bring a bag). We will cover the following:
Maintaining a healthy starter,
Mixing the dough (we will mix by hand and discuss using a mixer)
Using different flours
Baker’s percentage
Shaping and proving
Adding different inclusions
Cold fermentation
Bread scoring
Different ways of baking in a domestic oven
Making rolls and batards
Throughout the day we will bake our classic sourdough, a dark rye loaf and a surprise seasonal bake (it will be a yeasted bake, sweet or savoury)
You will be served pastries and hot drinks in the morning, and a delicious lunch and beverages will be provided (please let us know about any allergies).
What will you take home:
Bread in a banneton, ready to be baked next day
Dark rye loaf we will make and bake on the day
The surprise bake
Rolls and batards
Plastic scraper and a lame
Starter in a jar
Set of recipes so you can repeat the process at home
The spaces are limited to 8 per workshop at the moment and there are two dates available. I will be adding more dates very soon.

Hi Iza,
Thank you so much for today’s workshop. It was extremely informative, packed with practical tips and advice, and delivered in such a supportive and relaxed manner. I think everyone in the group left feeling enthusiastic and eager to put what you’ve taught us into practice.
Wishing you every success with the remaining workshops, and we hope to take part in any others you may offer in the future.
Wishing you and your colleagues a very Merry Christmas and a Happy New Year.
Best wishes,
Mark
