Hello!
I am sat in the bakery on this beautiful, sunny Wednesday afternoon. I am on my own now, all the baking for the day is done, doughs are tightly wrapped, waiting for their turn to be shaped and become buns, bread is slowly fermenting in the cold to be baked in a steaming hot oven in the morning. Brownies, cheesecakes and cookies are waiting for their turn to become someone's comfort. I can only hear the constant hum of our extraction fan and it calms me down. I love working with my team but ,only when I am here on my own, I feel that this is my second home I've created, with help from loving and passionate people. Calm before the storm.
Speaking of storm, I am expecting another two weeks (or so) of the bakery being this busy. If you are new to us welcome, and please do not be discouraged as it is not always like this. If you are a regular, please know that this craze will calm down and, at some point, we will go back to our regular rhythm.
What's new in the bakery? We have launched two sandwiches and were planing more but we got so busy that I have parked that idea for now so we can focus on increasing production of our current offer. For now you can have an egg roll with watercress served in a beautiful plaited milk roll or a ham & cheese croissant with mustard mayo and rocket. We have also added a bun to our range - home made salted caramel with pecan nuts, it has been very popular recently.
I have also added two more dates for our workshops in April and May, you can book by following the link. We are also working on a few exciting things behind the scenes so please watch this space.
In terms of practical stuff - there has been a lot of confusion about the farm shop and its ownership. To make things easier we have decided to close the middle door leading to it. We would like to ask you to use the main entrance to the bakery and then going to the shop for any other purchases you might need. We have also removed our tables from the larder so we ask you to make a use of the small space we have and the outdoors if the weather is kind. And we also want to ask you to queue outside so please dress aproppriatly to the weather conditions as we hate seeing you getting soaked in the rain. Thank you for cooperation on this so far:).
I think it's safe to say now we have made it till the end of January, from now on there is so much to look forward too - Fat Thursday to start with (12 February) and the days are getting longer already, the weather hasn't been to harsh either (in Poland people are currently facing minus fifteen degrees temperatures and loads of snow). I would say - onwards and upwards!
