28 June

I am writing this and I can not believe it is the last week of June already. What is happening and why is it just going so fast? We will blink one more time and it will be summer holidays which I am sure some of you are looking forward to.

When it comes to the bakers news, there is a few: over the next week we will be baking sourdough loaves with some Wildfarmed flour.

Wildfarmed focuses on simple and restorative farming practices that work with nature to promote biodiversity and bring back fertile soil. They create the circumstances in which nature is allowed to flourish. Wildfarmed flour is very nutritious, diverse and is digested easily. We will surely have some loaves on Thursday (Wednesday if we are lucky and time is on our side:)).

We also had a few emmer sourdough loaves which proved to be quite popular on Saturday so we will have more of these at the end of the week. Emmer is an Italian heritage grain which is very rich in Zinc, fibre, vitamin B and it has even 24% of our daily iron intake (a loaf would have less as we would use 30% of emmer to make it). I also thought it was delicious so definitely worth a try.

Also a reminder that we have some special days for particular bakes:

baguettes on Fridays and Saturdays

vegan cinnamon buns on Friday

burger buns on Saturday
